Experience the taste of the Blue Mountains at the Hydro Majestic Pavilion

The new Hydro Majestic Pavilion, will be the place to discover the history of The Hydro Majestic and to share all that is remarkable about the Blue Mountains. 


Celebrating the spirit of the Royal Easter Show pavilions of Sydney’s old showgrounds and operating as a magnificent interactive ‘living’ history space, the Hydro Majestic Pavilion will house a vibrant display showcasing boutique and unique food and wine from the Blue Mountains and its regions. Regions showcased will include Mudgee, Bathurst, Orange and the Western Plains. 


Demonstrating the best regional gourmet food and wine of the area, “The Taste of The Blue Mountains” this retail and exhibition space totalling approximately 500 sqm is a tourism destination to explore the history of the Hydro, including multimedia screening areas and history tours. 


The Hydro Majestic Pavilion will definitely be a destination not to be missed by any traveller!

Blue Mountains vineyard, 1.5 km outside the township of Rylstone - Mudgee.

Experience DE BEAUREPAIRE range of premium boutique wines grown on their Vineyard which is located 600 metres above sea level with a unique microclimate.




2009 Leopold: Reserve Shiraz-Viognier

Complex with rich mulberry, licorice and berry aromas.  Fruit driven palate with soft, smooth tannins.  A traditional co-fermentation in open vats and maturation in a combination of new and seasoned French hogsheads form an alliance between well integrated oak and fruit tannins to give a lingering, soft finish.

Vin et Gastronomie:    A simple pan seared pork tenderloin with a soy and maple syrup glaze, stir fried broccolini and sticky coconut rice would be delicious.  You could try it with poultry (chicken or duck) in a master-stock or a shitake mushroom and udon noodle soup with beef stock.  


2007 Victor: Reserve Cabernet Sauvignon     

A full bodied, yet elegant cool climate Cabernet Sauvignon with berry, cassis and chocolate flavours.  Firm ripe tannins and a long flavoursome finish.  A stellar vintage producing remarkable fruit, this wine is still but young. Juicy tannins, intensity and length yet kept in check by the fact that the fruit is grown in a cool climate.

Vin et Gastronomie:  Allow this wine the benefit of decanting.  It will pay dividends as you watch the butterfly emerge over time.  An investment in cellaring will also reward as well.  Roasted beef dishes that capitalise on caramelisation of fats and juices with a sturdy well made jus (or gravy) will sing ‘hallelujah’!  Accompany with the sweetness of quality roasted potato and onions and you will be in heaven.


2013 De Beaurepaire:  Blanc de Blanc           

A fresh and lively ‘bubbly’ from 100% chardonnay grapes is made through the traditional Charmat Methode producing a wine with a fine bead, elegant finesse and lingering citrus fruit on the palate.

2013  De Beaurepaire:  Botrytis Semillon – Coeur d’Or  

A luscious but refreshing Desert wine, made from Botrytised Semillon grapes picked on our vineyard in early April 2013.  It has been lightly matured in premium French oak.  A bright, clear golden colour with aromas of quince, pricot and some floral notes.  A rich palate with a long lingering finish.. 


2013 Merlot Caberent Petit Verdot

A medium bodied Bordeauz style blend with beautiful berry, chocolate and spice flavours and soft smooth tannins.


2013  Rosé                                  

Another great cabernet vintage has led to this ruby pink Rose., with aromas of strawberry and spice.  The crisp, fresh palate has flavours cherry and berry fruits, with a touch of sweetness and a long finish.

Vin et Gastronomie:  Charcuterie and Asian recipes would enhance the flavours   .


2013 Semillon Sauvignon Blanc    

Displays classic cool climate fruit characteristics.   Fresh and vibrant with bright light green gold in colour, with lemon and lime aromatics and a long crisp finish  Drink chilled.

Vin et Gastronomie:  Thai or Vietnamese cuisine would be a perfect  companion with this wine.  Utilising the citrus notes and acidity you wouldn’t go wrong with a Green Mango Salad and Salt and Pepper Prawns. Alternatively, a homemade soup of Chicken, Italian Sausage, Speck and Cannellini Beans with crusty sourdough would be complimented by a wine of sufficient palate weight and its fresh lemon zestiness and cleansing nature.

The Robert Stein Vineyard  is located just a short drive from the centre of Mudgee, in the Central West of New South Wales. 

With a winegrowing family lineage dating back to 1838, the 25 year-old vineyard produces award-winning reds, whites and fortifieds. 




2012 Semillon Riesling

Pale yellow with green hues showing lifted grassy and citrus characters on the nose. The Semillon portion is fresh and vibrant and the addition of 12% Sauvignon Blanc adds the tropical citrus fruit, and a nice long dry finish.  A lively fruit driven wine that demonstrates the synergy between these two varieties.


2012 Semillon Sauvignon Blanc

2014 Saignee

Our 2014 Signee was made by extracting freshly crushed grape juice from our Cabernet Sauvignon and Shiraz grapes.  The juice was then allowed to ferment using wild yeasts in French Oak Hogsheads, producing a Rose on the more serious side of the spectrum.  Aromas of strawberry and lime, lead to a refreshing dry palate with red berry characters.


2011 Cabernet Sauvignon
A wine with distinct regional and varietal character showing cassis and savoury bottle developed characters on the nose. The palate is finely textured with sweet fruit on the mid palate and grainy tannins to finish.


2011 Merlot
The 2011 season provided a cooler than normal growing season, but luckily the vineyard produced some great fruit.  This merlot displays savoury fruit and berry characters, with plum and chocolate flavours in the mouth.  A single vineyard blend from our youngest block, this Merlot is great for drinking now or cellar for 8-10 years.

Angullong Vineyard is one of the largest vineyards in the area with a total area of 220 hectares (550 acres) under vines. Angullong is situated near the locality of Panuara, about 35km south of Orange and 350km west of Sydney.

Angullong VineyardThe vineyards straddle the Orange Region (GI) boundary. The vineyards range in altitude from 620 metres down to 580 metres above sea level. All of the fruit for our Orange Region wines is sourced from the vines above 600 metres.

Vine plantings occurred during 1998 (190ha), 1999 and 2000 (30ha).
